What Are Microgreens?

Microgreens are baby plants about 2-6” tall that grow in soil. They are harvested after their first true leaves have emerged (around 7 days after germination). They are more mature than sprouts (which have no leaves and are grown in water). Microgreens are smaller than baby greens.

Microgreens are aromatic, flavorful (similar in taste to their mature vegetable state), and are packed full of nutrients (up to 40 X’s more than their mature form.)

Microgreens are a SUPERFOOD! Most varieties are rich in potassium, zinc, iron, magnesium, and copper. They are high in antioxidants. Microgreens are nutrient dense, which means they contain higher amounts of vitamins, minerals, and antioxidants than the same quantity of their mature plants.
